Throughout history salt has been used as a method for preserving meat. Biltong dates back to early Dutch settlers in South Africa who salted and dried their beef. The spice route through the Cape of Good Hope would later bring exotic spices like pepper and corriander to biltong and the French Hugenots, who established vineyards on the southern Cape, would later influence biltong by adding vinegar to create the recipe that we know today.
Today, Protea Foods still makes biltong in the traditional way as well as offering more modern variations of biltong. From the original thick-cut air-dried strips of topside beef to the smaller intensely flavoured stokkies or 'sticks'.
At Protea Foods we only use premium 100% Australian beef from local Victorian farmers and top quality spices in our products. Our biltong is hand-cut and slowly marinated with our special spices to ensure that all flavours penetrate into the meat providing you with a full flavoured snack.

Original Biltong Sticks
Our original style biltong is made the way biltong has been made for centuries. We hand-cut premium silverside beef which is then spiced with crushed coriander and marinated to absorb the flavours. To complete the process the beef is slowly air-dried. For those who like their biltong spicy, we also have the original style biltong available in peri-peri flavour.
Protea Foods' original biltong comes in long sticks. Slice off what you want to eat, whether that's thin slices or thick chunks. Original biltong sticks are sold in selected fine food stores and delicatessens around Australia.

Literally meaning, 'sticks', stokkies are small tasty twigs of biltong. Compared with Original sticks, stokkies are hand-cut into one centimetre strips from top quality topside beef. They are then marinated in the same manner as Original sticks and slowly air-dried. The result is a crisper product that is packed with flavour and moreish.
Stokkies are low in fat, high in protein and iron and are perfect as a snack on-the-go, while watching your favourite sports, or taken on camping trips or hikes in the Australian bush.
